Fresh Sesh IPA

While a true American IPA by definition starts at 5.5%, we here in Utah have embraced the idea of “session” IPAs for their drinkability and availability on tap per Utah law requiring draft beer be under 5% ABV. Mosaic, Citra, and Galaxy hops provide the dominant hop profile of the beer with a pleasantly grapefruit citrus character and just the right amount of bitterness to make this a truly sessionable beer.

Kölsch (voted Top 3 Best Local Beer)

We start with malt grown specifically for this style of beer from Cologne Germany, and add a little bit of vienna for that wonderful Kolsch flavor that is unique to this style of beer. This has a mildly sweet grain aroma with some floral hop character. The body is light and refreshing with a pilsner like grain quality with mild honey notes. *This beer is Gluten Reduced! -Voted Top 3 Best Local Beer in City Weekly's "Best Of Utah" edition. - NABA 2022 Bronze Medal Winner!

Vitruvian Pils

With inspiration from Leonardo Da Vinci, this collaboration beer for The Leonardo Museum of Creativity and Innovation uses Italian and French ingredients (Da Vinci was born in Italy, but died in France) for a perfect balance in this new(er) style pilsner. Italian pilsners capture the balance and drinkability of classic German pils, but they insert a beautiful, yet restrained, fresh, Noble-hops character through generous dry hopping. Da Vinci's diagram of the study of the proportions of the human body, as described by Roman architect Vitruvius, shows that arm span was equal to height in a perfectly proportioned body. We believe this might be a perfectly proportioned Italian Pilsner, so the name seemed fitting.

Blueberry Pomegranate Sour

Based loosely on a German Berliner Weisse this starts as a very
pale, refreshing, low-alcohol German wheat beer with a clean
lactic sourness. Our take bumps up the alcohol, uses some mildly
fruity hops, and a lot of blueberry pomegranate puree.

Märzen

Premium German ingredients in this namesake of the Oktoberfest celebration, gives the Marzen its beautiful amber color and rich malty backbone that makes it so easy to drink. A bigger version of our Festbier, the malty palate and finish do not seem sweet, but balanced with just the right amount of hops. The color and malty complexity make this a fall favorite for many looking to start out the Autumn season with some festive beer activities.

Whistlegowoo Dry Hopped Saison

This time we have a Dry Hopped Saison with Nelson Sauvin and Motueka Hops. It's like a IPA with Belgian character! This beer has a moderate fruity hop aroma with some white wine notes, med-low bubble gum and white pepper esters/phenols. It's dry, and finishes with some fruity hop character that makes you keep coming back.

Mole Porter

With the success of the Imperial Mole Porter, we decided to brew a draft strength version of this English style porter, with spices reminiscent of Mexican Mole sauce. Mole (or Americanized “Molé”) comes from an old Nahuati word for “mix”, or “sauce”, referring to the plethora of ingredients in mole dishes. The basic, Chipotle peppers, cinnamon, and cacao, pairs well with the coffee and dark chocolate character of an English porter, so we threw them together for a rich and complex beer that stays surprisingly drinkable. This is a one of a kind beer that is great for Halloween, Dia de los Muertos, Thanksgiving, and all through the holidays.

Steeplejack - English IPA

In collaboration with Proper Brewing for the Utah Brewer's Guild - Steeplejack English IPA: A tribute to skilled workers, this English IPA showcases a balanced blend of hop flavors with earthy, floral, citrus, and spice notes.

Mango Gose

Our small batch beers are made on our on barrel pilot system, and they don't last long. We took this tart and mildly salty German beer style and added a bunch of mango purée and a touch of Celtic Sea Salt 5.0% ABV 10 IBU

Hefeweizen
  • .

Low banana and clove flavor highlight this classic German wheat beer. The soft, somewhat bready or grainy flavor of wheat is complementary, as is a slightly grainy-sweet malt character. Hop flavor is very low as the yeast character is the star of the show. This is a very drinkable style of beer with a relatively dry finish.

Druish Princess - Schwarzbier

The name is a nod to a classic movie, but Schwarzbier, literally means “black beer” in German, and sometimes called a “black Pils”. Our version of this beer is somewhat malty with a nice dry finish. This is a dark beer that drinks like it’s lighter cousins, with a hint of roasted character.

The FIRST Bewilder beer to come out of the tanks! Despite having "bitter" in the name, this is a copper colored English beer with a well balanced earthy hop character and moderate malt sweetness. Brewed with traditional floor malted English grains and a not so secret crystal malt. *This beer is Gluten Reduced! -NABA 2022 Bronze Medal Winner!

Vienna Lager

This redish German lager has a bready, mildly toasty malt character with a dry finish and nice hop balance.

Pumpkin English Amber

Pumpkin beers are becoming popular enough to have their very own category. This year, our version of the Autumn Seasonal Beer uses our ESB as a base with just the right amount of pumpkin spice to get you in the mood for Fall. The generous malt body and amber color is perfect this time of year and the balance with the spice is hard to beat, and is anything but basic.

Orange Honey Wheat

This wheat beer uses local Utah honey and sweet orange peel to create a medium-sweet beer balanced with newer German hops. The Orange Honey Wheat has a light wheat flavor and the honey helps this beer finish dryer than other wheat beers. The Mandarina Bavaria hops are light and refreshing and reflect the mild orange citrus flavor of the peel. Easy drinking and refreshing beer, it’s great for those long hot days of summer.

We then dry hopped it with Idaho Gem hops, added copious amounts of cranberry puree, a lot of fresh orange peel, and some cinnamon. This is a one of a kind flavor medley that came just in time for the holiday season. You have to try it.

The Barrel Aged Mole Porter is back!!! This beer is a big fan favorite, dare we say it has a following, and this year's batch is incredible! This is an imperial strength English style porter, with spices reminiscent of Mexican Mole sauce. Mole (or Americanized “Molé”) comes from an old Nahuati word for “mix”, or “sauce”. In addition to the basic ingredients, Chipotle peppers, cinnamon, and cacao, we also added Mexican vanilla, Mulato and Pasilla Negro peppers. For added depth, we also aged the porter in Tequila and Mezcal barrels for 8 months. All of this comes together for a rich and complex beer that keeps you coming back for more. This is a hearty beer that is mildly warming and is great for Halloween, Dia de los Muertos, Thanksgiving, and all through the holidays! Do not miss out!

El Fruti Boi

Introduced for Pride week two years ago, we decided to add both lactose and a tropical fruit blend of pineapple and guava for El Fruti Boi, our milkshake Pale Ale. Just in time for Pride Month, a portion of sales will be going to benefit the Utah Pride Center. This is a silky smooth fruity beer that drinks great, but still reminds you there is beer in there, with a big hop character.

Dos Hazy Boi

At 8%, this is pretty big beer for Bewilder, but at its core, this
style is for beer lovers fascinated by hops. The late hopping,
indicative of the NEIPA style, provides the same intense hop
experience through flavor and aroma instead of, but not without,
mild bitterness. We use, Citra, Sabro, Mosaic, and El Dorado hops,
which produces a huge tropical fruit aroma and flavor dominated
by pineapple with mild citrus, but there is no fruit juice in this
beer. -NABA 2022 Gold Medal Winner!

Gecko Fingers

Inspired by the constant evolution of the West Coast IPA style, Gecko Fingers uses a surprisingly simple grain bill and clean fermenting yeast that provides just enough backbone to support the hops, without getting in the way. All the modern tricks were used to layer huge amounts of hop character all over this beer, with heavy handed additions of El Dorado and CTZ throughout the process.

CAN TO GO - Chick Flip West Coast Pilsner

While the Pink Boots Collaboration beers can go many directions, we chose to go big with a West Coast style Pilsner, meaning waaaay more hops than you would typically find in a regular American pilsner. This is a very crushable beer that is perfect for summer. Brewed with the help of members of the Pink Boots society which happen to also be members of the Bewilder team, we couldn’t be happier with how this turned out. The label art was also done by a local artist Sadie Burzan!

As a tribute to the first beer we ever made at Bewilder, our Double ESB very big brother to the ESB on tap. Despite having "bitter" in the name, this is a copper colored English beer that even with the high ABV doesn’t feel overly sweet or out of balance. Brewed with traditional floor malted English grains and blended for just the right character, this is an awesome beer that screams cellaring and future vertical flights.

CAN TO GO - Deseret IPA

A beer influenced heavily by a homebrew recipe from Marshall Lent at Salt City Brew Supply who was looking for a beer that looked and tasted a bit like honey. This American IPA is hop forward with citrus and floral notes while maintaining some mild honey sweetness from both honey malt and local Utah honey. Deseret is the original name the Mormons gave the area Salt Lake City is located, and the word means Honey Bee which is closely related to hard work and being industrious in nature. - 2022 Honey Beer Competition Gold Medal Winner!

Haze Hugs Hazy Pale - Can

Jucy, Hazy, NEIPA, however you like to define the family of beers, this one delivers ALL the soft lovable hugs to your palate. We hit the fermentation multiple times for maximum flavor of some cool hops on this latest version of a session hazy beer for our taps. Made with low color maris this beer has just the right color and malt balance. Bru-1 and Eldorado do the heavy lifting, but we added a fun new hop called Zamba (formerly Samba) characterized by juicy pineapple and mango with bursts of stone fruits, and tangerine. So open your arms (mouth), and get ready for a hug of flavor.

Schlotfegerla - Dark Rauchbier

This is a full-bodied, dark smoke beer. The fine Weyermann beechwood- smoky notes combined with the aroma of espresso invite you to take your first sip. On the tongue it impresses with pronounced notes of malt reminiscent of dark chocolate and bread crust. Together with the fine smoky impressions it becomes an harmonious, characterful beer that goes well with flavors in rich meats and ham.

Brew-Lab German IPA

This is in our Brew Lab ***Only 5 cases of this were made.*** We took some artistic license in naming a beer a "German IPA", but this beer uses German pilsner malt, our Kolsch yeast, and all German hops (Callista, Ariana, and Hull Melon). It's more along the lines of a west coast IPA. Firm bitterness and a dry finish. Hop flavor and aroma are fresh melon, red fruit, a touch of candied apple. 7.1 ABV 70 IBU

Fresh Hop Mosaic Pale

This ale uses a simple grain bill to allow the fresh hops to shine through. We used huge amounts of fresh Mosaic from Mill 95 in Idaho that had only been off the bine for 5 hours when they went into the beer. It's a pale yellow with a slight haze. Medium-low bitterness, and a nice fresh hop aroma that is dank and a bit green with some hints of fresh berry. Flavor has similar dank, pithy, and berry notes and a lot of the typical "green" flavors that make fresh hop beers so fun and unique. A seasonal treat for harvest that needs to be enjoyed fresh to enjoy the full essence of the fresh hops.
