We start with malt grown specifically for this style of beer from Cologne Germany, and add a little bit of vienna for that wonderful Kolsch flavor that is unique to this style of beer. This has a mildly sweet grain aroma with some floral hop character. While a true American IPA by definition starts at 5.5%, we here in Utah have embraced the idea of “session” IPAs for their drinkability and availability on tap per Utah law requiring draft beer be under 5% ABV. Mosaic, Citra, and Galaxy hops provide the dominant hop profile of the beer with a pleasantly grapefruit citrus character and just the right amount of bitterness to make this a truly sessionable beer.
Jucy, Hazy, NEIPA, however you like to define the family of beers, this one delivers ALL the soft lovable hugs to your palate. We hit the fermentation multiple times for maximum flavor of some cool hops on this latest version of a session hazy beer for our taps. Made with low color maris this beer has just the right color and malt balance. Citra and Eldorado do the heavy lifting, but we added a fun new hop called Bru-1 characterized by juicy pineapple and green fruit. So open your arms (mouth), and get ready for a hug of flavor.
Much like an Irish Red, this beer is balanced and uses a moderate amount of kilned malts and roasted barley in the recipe, which gives the beer the color for which it is named. Featuring an approachable hop bitterness which rests on the palate, it also features a mild caramel malt sweetness. We sourced our pale malt grown in Scotland farms for a unique and genuine flavor backbone, as well as Scottish yeast to keep this as authentically a Scottish beer as possible.
Based loosely on a German Berliner Weisse this starts as a very pale, refreshing, low-alcohol German wheat beer with a clean lactic sourness. Our take bumps up the alcohol, uses some mildly fruity hops, and a lot of Guava Fruit Puree.
The name is a nod to a classic movie, but Schwarzbier, literally means “black beer” in German, and sometimes called a “black Pils”. Our version of this beer is somewhat malty with a nice dry finish. This is a dark beer that drinks like it’s lighter cousins, with a hint of roasted character.
We just had to use premium German ingredients for this German classic. The floor-malted pilsner malt gives our version an extra little bump in the malt character added to a subtle toasted bread flavor from the Munich malt. The German hops keep things balanced but still slightly malt forward and very drinkable with a clean grainy lager finish.
Inspired by the constant evolution of the West Coast IPA style, Gecko Fingers uses a surprisingly simple grain bill and clean fermenting yeast that provides just enough backbone to support the hops, without getting in the way. All the modern tricks were used to layer huge amounts of hop character all over this beer, with heavy handed additions of El Dorado and CTZ throughout the process.
"West Coast PIlsner". West Coast Pils is a bit of a new thing. It's kind of like a German pilsner, but using American hops that would usually be associated with West Coast IPA. I'd think of it like a touch stronger version of our Vitruvian Pils, but hopped with fruitier hops. Pours a pale yellow color with a white cap of foam. Aroma has some notes of lemon and citrus fruit and a touch of pine resin and hay. Flavor follows suit. Finishes just off dry.
Bewilder's first bottled beer! This is a Belgian farmhouse style ale brewed with hibiscus and rose hips, just for Valentines Day! We aged this Saison in Beehive Distilling gin barrels for a nice dry finish. This is an amazing mix of mild phenolics from the Belgian yeast, botanicals, with a hint of oak and gin. You will fall in love with beer!
The Barrel Aged Mole Porter is back!!! This beer is a big fan favorite, dare we say it has a following, and this year's batch is incredible! This is an imperial strength English style porter, with spices reminiscent of Mexican Mole sauce. Mole (or Americanized “Molé”) comes from an old Nahuati word for “mix”, or “sauce”. In addition to the basic ingredients, Chipotle peppers, cinnamon, and cacao, we also added Mexican vanilla, Mulato and Pasilla Negro peppers. For added depth, we also aged the porter in Tequila and Mezcal barrels for 8 months. All of this comes together for a rich and complex beer that keeps you coming back for more. This is a hearty beer that is mildly warming and is great for Halloween, Dia de los Muertos, Thanksgiving, and all through the holidays! Do not miss out!
At 8%, this is pretty big beer for Bewilder, but at its core, this
style is for beer lovers fascinated by hops. The late hopping,
indicative of the NEIPA style, provides the same intense hop
experience through flavor and aroma instead of, but not without,
mild bitterness. We use, Citra, Sabro, Mosaic, and El Dorado hops,
which produces a huge tropical fruit aroma and flavor dominated
by pineapple with mild citrus, but there is no fruit juice in this
beer. -NABA 2022 Gold Medal Winner!

In collaboration with Strap Tank Brewery in Lehi Utah, this single malt Scottish style ale was brewed at both breweries with a massively extended boil time then blended together for a truly one of a kind kettle caramelized beer. This is a malt forward beer with some alcohol warmth, but very drinkable for it’s age. This beer won a gold at the North American Brewers Association National Beer and Cider competition in 2022!
Stored for a year in whisky barrels, we took our NABA award winning Wee heavy and made it even bigger and more complex. In collaboration with Strap Tank Brewery in Lehi Utah, this single malt Scottish style ale was brewed at both breweries with a massively extended boil time then blended together for a truly one of a kind kettle caramelized beer. This is a malt forward beer with some alcohol warmth, but very drinkable for it’s age.

As a tribute to the first beer we ever made at Bewilder, our Anniversary Ale is a very big brother to our ESB. This barrel aged double ESB is everything you want out of a barrel aged beer. Despite having "bitter" in the name, this is a copper colored English beer that even after aging in whiskey barrels doesn’t feel overly sweet or out of balance. Brewed with traditional floor malted English grains and blended for just the right character, this is an awesome beer that screams cellaring and future vertical flights. Limit 4 cans per customer per visit.

Brewed with traditional floor malted English grains and blended for just the right character, this is an awesome beer that screams cellaring and future vertical flights.
Inspired by our friends to the south, this pale lager is pleasantly light and refreshing. Great for spicy food, hot days, hard work, or sitting on the beach somewhere. This beer is lightly hopped with a mellow malt flavor making it thirst quenching and a summer must. Just don't put it in a clear glass container, and please use any limes sparingly.
We decided to push some fruity thiols using Phantasm and Lunar Crush yeast in a New Zealand Pilsner. We have learned how to use this Phantasm/yeast combo correctly through some trial and error, so we thought why not use it on a light and refreshing pils base. This is a hop forward lager with some great notes of tropical fruit, citrus, and pineapple. It sounds complicated, but it's a simple and easy drinking beer that you have to try!

With inspiration from Leonardo Da Vinci, this collaboration beer for The Leonardo Museum of Creativity and Innovation uses Italian and French ingredients (Da Vinci was born in Italy, but died in France) for a perfect balance in this new(er) style pilsner. Italian pilsners capture the balance and drinkability of classic German pils, but they insert a beautiful, yet restrained, fresh, Noble-hops character through generous dry hopping. Da Vinci's diagram of the study of the proportions of the human body, as described by Roman architect Vitruvius, shows that arm span was equal to height in a perfectly proportioned body. We believe this might be a perfectly proportioned Italian Pilsner, so the name seemed fitting.
