(2025) As stout ages, Goose Island’s brewers often observe a range of fruit expressions that emerge from the barrel and from time itself. Inspired by the flambéed dessert classic Cherries Jubilee, 2025 Bourbon County Brand Cherries Jubilee Stout captures the essence of cognac-soaked cherries and caramelized citrus.

The beer began its aging journey in freshly emptied bourbon barrels, which impart rich layers of oak, warm vanilla and subtle baking spice. It was then finished in cognac barrels, adding elegant notes of dried fruit and contributing to a rich, full mouthfeel.

Following the aging process, the stout was blended with Montmorency cherries, citrus, and panela–resulting in a velvety, decadent beer with flavors of candied dark cherry, soft vanilla and a caramelized citrus finish. 14.5% ABV.

Originally brewed in honor of the 1000th batch at our original Clybourn brewpub. A liquid as dark and dense as a black hole with thick foam the color of a bourbon barrel. The nose is an intense mix of charred oak, chocolate, vanilla, caramel and smoke. One sip has more flavor than your average case of beer.

2025 Medianoche unites the deep sweetness of bourbon with the spiced intensity of rye in one harmonious blend. This year’s release features the highest share of rye barrels in a non-rye Medianoche to date—34% of the blend, to be exact. The barrel lineup is nothing short of exceptional, including Elijah Craig barrels, Henry McKenna barrels, Old Fitzgerald barrels, Weller 12 barrels, Buffalo Trace barrels (bourbon and rye), Willett Family Estate rye barrels, 10-Year Templeton rye barrels, and Stagg Jr barrels. The result is a richly layered stout with notes of candied walnut, caramel mocha, dark chocolate-dipped figs, and honey-drizzled pumpernickel bread, finishing with deep oak, cigar tobacco, and a warm fusion of bourbon and rye character.

Milk & Cookies Stout transports us to our childhood kitchens where freshly baked cinnamon-raisin cookies warmed us against winter nights and familiar grandparent voices permeate the sounds of the night. Hints of cold milk, sweet vanilla, and hearty oatmeal overwhelm and remind us that our memories are forever lead by our senses. In this case, we are led home.

The allusion to pink elephants and the choice of names is not due to chance. With a particular character, the unique taste results from triple fermentation and the use of three different yeast strains. Taste: A good shot of alcohol ignites in the mouth, as it were, which really warms the tongue and palate. The taste is also characterized by its roundness. The finish is strong, long and dry bitter.

Color and Sight: Dark Chocolate Brown with a compact foam, white-yellow, stable and creamy. Odor Touches of caramel, mocca and chocolate. Spices such as licorice and coriander are also present.

Taste: Initially a very pleasant sensation in the mouth of alcohol and softness. It is followed by a growing bitterness, which comes partly from hops, but also from roasted malt and chocolate malt. Towards the end, pleasant balance between bitter, sour and sweet notes.

Colour and appearance: a pale blonde colour and fine creamy-white head which clings to the glass.

Flavour: A pleasant sparkling carbonate content produces a soft, full taste perception. The aroma is very balanced with a fruity, flowery background and an initial Chardonnay impression which evolves into a spicy, mild aroma of hops.

Taste: Full-bodied and balanced with fruity tones of apple and Chardonnay grapes. Deliria has a fine, mild bitterness in its aftertaste and a splendid, round feel in the mouth which evolves well.
