Made from New Zealand's coveted Marlborough Sauvignon Blanc grapes, Phantasm is rich in thiol-precursors. These precursors are unlocked by a thiolized yeast strain, resulting in potent tropical aromas and flavors. Powerful expressions of guava, passionfruit, lychee, white peach, and citrus are in abundance, complemented with the unique terroir of New Zealand. Nelson Sauvin in the dry hop offers a punchy, diesel dankness that adds even more complexity and contrast. Medium-bodied with a deftly balanced bitterness.

Our series of fruited sours showcase the ever-evolving house culture present in our custom-built oak foeder. In addition to this house-culture, a fresh pitch of our favorite lithuanian farmhouse yeast was added to bring more complexity and character. Re-fermented on passionfruit and pink guava at a rate of over 25 pounds per barrel, the tropical nature perfectly complements the firmly tart sour ale at the heart of it all. Light-bodied, and eminently refreshing.
We took our traditional Czech-style dark lager, 'Morava' and added a pinch of artistic license in the form of a smoked malt addition. The result is a complex lager that shifts from bready, to roasty, to subtle smoke. The finish highlights notes of chocolate and coffee, with a bit of noble spice from Czech-grown Saaz hops.

Inspired by the layered joy of a mexican hot-chocolate, our decidedly grown-up tribute is aged for a year in tequila barrels. Judicious additions of chiles, habanero peppers, cinnamon, and vanilla yield an immersive flavor experience. The heat is present, but subdued, allowing a fuller expression of both the chiles and habanero peppers. The tequila barrel character becomes more prominent on the finish, well-complemented by subtle vanilla and cinnamon notes.
Our award-winning Imperial Porter spends a full year aging to perfection in first-use bourbon barrels. The result is a harmony of oak and a decadently dark malt profile, punctuated by the extravagance of madagascar vanilla beans. Expressions of sweet chocolate cake, dark fruit, and vanilla wafer play against a backdrop of understated roastiness. Warming bourbon and toasted oak provide balance and depth.
