Czech pale lagers offer the same rich malt and noble hop character found in Czech Pilsners, but with slightly reduced bitterness, alcohol, sweetness, and body. Subtle malt notes of biscuit and lightly toasted bread strike a harmonious balance with the spicy floral Saaz hops, creating a delicately refined lager.

Pungent aromas of dank cannabis and fresh apricot lead into nectarine, grapefruit, tangerine, diesel, and resinous pine on the palate. Cryogenically frozen Simcoe fresh hops make up 50% of the dry hop, lending an unmatched depth of flavor in this hop-saturated, deceptively boozy beer. A simple, pale grist of pilsner malt with a dash of white wheat keeps the body lean for such a strong IPA, while a layered, assertive bitterness keeps the finish dry despite the elevated alcohol.

A pleasantly overripe, dank quality in the aroma and the front of the palate accompanies the tropical fruit salad, ending in a smooth and soft finish. English malt and hops are equally celebrated in this tribute to British strong bitters. Pouring a beautiful copper color, the malt profile is rich with flavors of bread crust, biscuits and caramel. UK East Kent Golding and PNW Willamette hops offer layered floral aromas and herbal notes of black tea that linger through the finish. The heavy bittering balances the rich maltiness, creating the perception of a moderately bitter beer (by American standards).

A complex blend of foeder fermented ales and wine barrel aged beer was refermented on raspberry and Cara Cara orange puree. Singularity is, ironically, a blend of two different imperial stouts - one aged for 2 years in a Westland whiskey barrel, and the other aged for 1 year in a Westland whiskey barrel. After aging and blending, Singularity was steeped on cinnamon sticks, nutmeg seeds, green cardamom pods, cloves, allspice berries, and fresh ginger root. This big, rich, full-bodied beer flaunts notes of chocolate, roasted coffee beans, caramel, oak, vanilla, and of course the spiced complexity of chai tea. Cardamom and ginger take center stage among the spices, while every component plays its part in creating a harmonious, singular experience.

Lion Tamer 2025

The 2025 edition of our award-winning Imperial Porter spent a full year aging to perfection in first-use Westland whiskey barrels. The result is a harmony of oak and a decadently dark malt profile, punctuated by the extravagance of Madagascar, Sumatra, Uganda, and Nicaragua vanilla beans. Expressions of sweet chocolate cake, dark fruit, and marshmallow play against a backdrop of understated roastiness. Warming bourbon and toasted oak provide balance and depth.

Inspired by the layered joy of a Mexican hot-chocolate, our decidedly grown-up tribute is aged for a year in tequila barrels. Judicious additions of ancho, guajillo, and toasted habanero chiles, cinnamon, and four vanilla varieties (Mexico, Peru, Tanzania, and Comoros) complement flavors of rich fudge and lightly roasted coffee. The heat of the chiles is present, but subdued, allowing each facet of this beer to shine.
