Ishikari

Inspired by some of the extra pale and dry lagers brewed in Japan, Ishikari humbly attempts to showcase the delicate balance of its style. Brewed with a grist of over 20% jasmine rice, gently hopped with Perle and Tettnang in the kettle, and fermented with our house lager strain, Ishikari is excessively drinkable and can be paired with any food. Light bodied, dry, floral, and just enough bitterness to maintain a crisp balance.

German pilsner malt shines in this Munich-style Helles lager, providing rich flavors of freshly-baked bread and lightly toasted biscuit. Named in tribute to the intrepid surfers of Munich's Eisbach river.

Our series of fruited sours showcase the ever-evolving house culture present in our custom-built oak foeders. As the name implies this sour ale draws influence from Tepache, a popular low-alcohol fermented pineapple drink from Mexico. This sour ale stays true to its Tepache-inspired roots as it is tart, slightly funky, yet exceptionally refreshing. A secondary fermentation on top of juicy pineapple puree at over 20 lbs per barrel provides layers of subtle sweetness and a tangy tropical punch. Finally, organic pineapple chunks with the rind, organic cinnamon sticks, and organic piloncillo (unrefined Mexican cane sugar) were infused to fruitfully celebrate pineapple with a touch of spice and earthiness.

Singularity is, ironically, a blend of two different imperial stouts - one aged for 2 years in a Westland whiskey barrel, and the other aged for 1 year in a Westland whiskey barrel. After aging and blending, Singularity was steeped on cinnamon sticks, nutmeg seeds, green cardamom pods, cloves, allspice berries, and fresh ginger root. This big, rich, full-bodied beer flaunts notes of chocolate, roasted coffee beans, caramel, oak, vanilla, and of course the spiced complexity of chai tea. Cardamom and ginger take center stage among the spices, while every component plays its part in creating a harmonious, singular experience.

Inspired by the layered joy of a Mexican hot-chocolate, our decidedly grown-up tribute is aged for a year in tequila barrels. Judicious additions of ancho, guajillo, and toasted habanero chiles, cinnamon, and four vanilla varieties (Mexico, Peru, Tanzania, and Comoros) complement flavors of rich fudge and lightly roasted coffee. The heat of the chiles is present, but subdued, allowing each facet of this beer to shine.
