1. Silent Knight (Nitro)

  • ABV: 3.8%
  • SRM: 37.0
  • IBU: 36
  • OG: 1.043
  • FG: 1.014

Same wort as Brew 031A (Quiet Pale). This, too, is reminiscent of a standard UK hand-drawn stout, but with a twist. Water treatment with minerals to "harden" the water brings an authenticity to the mouthfeel and mild bitterness level. A simple recipe that transports me back to our England adventure of 2015. The "twist" is that the dark grains were not included in the mash and boil, but cold-steeped for 48 hours (including some cacao nibs), then filtered and added to the fermenter. This makes for a really smooth and less bitter brew. Served on nitro! (Brew 031B) B: 5/24/2019 K: 6/8/2019: T: 6/12/2019

2. Sunny Sipper - Conan

Loosely based on a recipe for Lawson's Sip o' Sunshine. Six different hops after the boil (whirlpool), as dry hop during fermentation, and pure Citra as a keg hop create a complex hop aroma and flavor experience. B: 9/14/2019 K: 9/28/2019 T: 10/5/2019

3. Sigh Dur

  • Hard Apple Cider
  • ABV: 7.0%

Pure fermented clear apple cider. Very easy and quick to prepare, then 1.5 weeks of fermentation under pressure, then kegged. Simple, tasty cider flavor. (Cider 002) B: 8/17/2019 K: 8/28/2019: T: 8/30/2019

4. Kolshhh

  • Kolsch
  • ABV: 5.9%
  • SRM: 2.0
  • OG: 1.044
  • FG: 0.999

A light, easy drinking crowd pleaser. Even non-craft beer folks can appreciate a kolsch. It is a lager-like ale: crisp and smooth with no perceptible bitterness. This one is going quickly in this summer heat. (Brew 032A) B: 7/20/2019 K: 8/4/2019 T: 8/13/2019

5. Sunny Sipper - Hothead

  • SRM: 7.0
  • OG: 1.063
  • FG: 1.012

Loosely based on a recipe for Lawson's Sip o' Sunshine. Six different hops after the boil (whirlpool), as dry hop during fermentation, and the same hops as a keg hop create a complex hop aroma and flavor experience. Additionally, Omega Hothead yeast (Norwegian Kveik) was used with uncontrolled fermentation temperature. B: 9/14/2019 K: 9/28/2019 T: 9/28/2019.
