This IPA is inspired by the Philippines. Brewed with Calamansi, a fruit that is a cross between a sweet lime and sour orange. A sweet malty backbone helps balance the sour of the fruit.

Sour Ale brewed with Jasmine Rice, Koji, Umeboshi plum and a touch of smoked malt. This complex beer brings a tart, sweet, salty crusher you can drink all year round. Finishes dry.

Koji - Aspergillus oryzae is a mold used in East Asia to saccharify rice, sweet potato, and barley in the making of alcoholic beverage
Umeboshi - these plums are a popular kind of Japanese tsukemono ('pickled thing'; preserved or fermented) and are extremely sour and salty with a touch of sweetness (when made with honey)
